Pan Seared Halibut


After being without our kitchen for two weeks (pictures of renovation coming soon!) John and I were so ready for a home cooked healthy dinner! One of our favorites is to peruse the seafood section of Whole Foods (yeah right, usually Kroger), find something that looks fresh, and improvise. In this case, today it was Halibut - looked good and the price was right! Here's our go to recipe when it comes to a simple, healthy pan-seared fish:

Heat a couple of tablespoons of olive oil in a frying pan on medium-high.
Season fish with salt, pepper, oregano, and lemon juice.
Wait til olive oil is "smoking hot" (according to John) and place the fish directly on the oil.
Leave on heat for about 3 minutes, and flip once.
Cook for an additional 3 minutes, and remove from heat.
Dinner is served!

Simple recipe, amazing results, every time! This was served with parmesan couscous, doctored up with basil and flat leaf Italian parsley from our herb garden, as well as pine nuts and artichokes. I also sauteed kale and spinach in olive oil, white wine, garlic, and fresh lemon juice. What's your favorite go-to recipe?
