Peanut Butter, Date, and Pecan Cookies

You must try these!




It all started with a trip to Sam's Club.  I am one of the weird people in the world who loves grocery shopping (but odds are, if you're reading this blog, you do too!) and tend to get a little over ambitious whenever the opportunity to buy bulk items is presented. So, put me in Sam's Club and show me a 2 lb box of dates, and you can figure out the outcome.

Here's a picture of the dates, just in case you were curious.  Don't judge...I'm still figuring out how to make a picture of a box of dates look like art.


After a few days of snacking on dates and almond butter, I realized that if I wanted to put a dent in these little sweeties before they went bad, it was time to get creative.  I started searching a newfound blog that I just love and stumbled across peanut butter date blondies, which convinced me I must combine my date and nut butter obsession into a baked good.  Then I found this recipe and a star was born!  The only change I made was to add 1/2 a cup of roasted pecans for a little crunch.  These cookies could not have been easier and are delicious!  John told me he thinks they're the best cookies I've ever made, and believe me, I make a lot of cookies.




Ingredients:
1 egg, whisked
1/2 cup sugar
1/2 cup brown sugar
1 cup peanut butter
1/2 cup chopped dates
1/2 cup chopped roasted pecans

Directions:
Blend the eggs and sugar.  Mix in peanut butter and combine thoroughly.  Stir in the dates and pecans.

Roll into 1 inch balls and place on baking sheet and press fork on top of each ball to flatten.  Bake in 350 degree oven for 14 minutes.  These keep well in an air tight container and can also be frozen easily.
