Veggie and Shrimp Stir Fry with Thai Sauce

Ever since my soul sister, Lindsay, moved back to the ATL we've been planning to get together and steal exchange some music with each other.  We have similar taste in music and have been jonesing for each other's latest buys (I landed some new Wilco, Avett Brothers, and Band of Horses to name a few, Lindsay's totally hooked on Passion Pit thanks to me!).  


Of course, music requires wine...oh, and food.  As we discussed how much we both believed in eating real food and ingredients that can be easily pronounced, we munched on some artificially flavored honey mustard pretzels that I bought on impulse...oops!  Oh well, can't do everything right.  To accompany our gourmet appetizer of mustard flavored pretzels, we decided to call it a date and cook some Thai food.






Lindsay found the recipe online and we altered it a little bit based on what we had.   This recipe is super easy and jam packed with good-for-you food.  Serve on top of some jasmine rice and call it a night!


Veggie and Shrimp Stir Fry with Thai Sauce
Serves 4 


Ingredients:
1 lb shrimp, peeled and deveined
1 medium eggplant, chopped into 1 inch pieces
1/2 onion, chopped
8 oz chopped mushrooms
1 medium zucchini, chopped into 1 inch pieces
1/3 cup chicken broth
fresh chopped cilantro
2 tbsp canola oil


For the Stir Fry Sauce
2 Tbsp oyster sauce
2 Tbsp soy sauce
1 Tbps Agave Nectar
2 Tbsp brown sugar
6 - 8 cloves minced garlic
1 tsp cayenne pepper
1 tsp sesame oil


Directions:
Combine all stir fry sauce ingredients in large bowl and set aside. 


In a large saute pan, heat 2 tbsp canola oil.  Add the onions, half of the chicken broth, and garlic and saute until translucent.   Add the chopped eggplant and zucchini,  and cook for about 5 minutes.  Add in the stir fry sauce and cook for 5 more minutes.  Add in chicken broth whenever mixture gets dry.


In a separate pan, cook the shrimp in olive oil and salt until just done.  Mix in with the veggies and top with fresh cilantro.  Serve immediately over jasmine rice.  I love sriracha chili sauce, so do Lindsay and John, so we definitely went to town and burned the roofs of our mouths!


In other news, my oven is getting repaired tomorrow!!! Yay!!  I have never wanted to bake chocolate chip cookies so badly in my life.  Be back soon with some fun cookie recipes!
