Super Food Me


Surely I'm not the only one who over-indulged this holiday season.  That's part of the fun of it!  But I feel that this year was a little different in that I literally indulged the entire season, not just on Christmas Eve and Christmas and at the occasional holiday party.  Nope, I pretty much had at least one or two sweet treats every single day in December, plus alcohol on most days.   Oy.  After Christmas I reached a breaking point (it probably has something to do with the fact that my jeans are snug...just sayin') and am so ready to get back to my normal, healthy routine.  We're off to the mountains for a few days to celebrate New Years with some friends, so I'm fully prepared for the indulgence that comes with it (and the hangovers that will result), but after that it's game ON for a healthy 2011!

In the couple of days between Christmas celebrations and our New Years trip, I committed to healthy eating and lots of light exercise (mainly long walks or short runs).  One super easy lunch or dinner recipe that I tried was inspired by a post I saw on Brittany's blog, Eating Bird Food.   She referenced Kale-n-Rice Kristin Suzanne's book, EASY Raw Vegan Transition Recipes and it looked so good!  I used whole wheat orzo, kale cooked in Pam, lemon juice, and little bit of Garlic Gold, dried cherries, 1/2 a small avocado, and feta cheese, and it was delicious and cleansing - just what the doctor ordered!  I don't know about you but when I eat kale, I automatically feel healthier :-)

I'll be making a lot more of these in the coming weeks when John and I go vegetarian for the month of January, just like we did last year.  (I use the term vegetarian lightly - there will be some fish consumption on occasion).

  1. We are in desperate need to start back on the eating healthy track! I will keep you posted if I come across any other good vegetarian recipes. I have a great cook book called Vegan Planet. I will blog on it if we find any good ones over the month of January.
