The Calm Before the (figurative) Storm (and after the real storm)

Well Hellooooo! I made it in to the office today and let me just tell you, 5:00 came faster than it has in a while! It was nice to be around humans besides my husband and to feel productive. When I came home I packed for my trip to Austin (leaving tomorrow at 10:55 a.m.) and cooked a veggie packed dinner: Coconut Curry Stir Fry! This is such a good way to get a big punch of veggies. My old favorite way to use up veggies was pasta; now it's this stir fry. What can I say, I'm on an Asian kick!  This time (in addition to the curry sauce) it included zucchini, yellow bell pepper, mushrooms, cashews, and parsley. All served over jasmine rice. Yum!  Oh, and I had some wine, because today's my Friday.  
Lunch was a salad, which was just what I wanted after eating out at an Italian restaurant last night. Oh, and an individual sized cottage cheese for some protein. 
I also had a peanut butter chocolate chip Larabar around 4. Have you guys tried these? They seriously taste like a Snickers. Except they're healthy! Honestly the calorie count is probably about the same, but the ingredient list is a LOT better.

Breakfast was an apple (do you spot the little visitor in this pic!?) and a whole wheat english muffin topped with almond butter. 
I managed to get out and walk Sam for about 20 minutes this morning but he was pulling like a mad man and I was basically ice skating. So I came home and took a picture of him with his new form of entertainment:
The walk was nice, but I'm SO ready to get back to my regular workouts next week! I need some cardio in my life like mad.  BUT I have priorities and am fully prepared to whoop it up ALL weekend in Austin, TX with this lovely lady in honor of her bachelorette party, and the rest of my best friends!  I seriously can.not.wait.

  2. The picture of Sam is too cute! I love the PB Chocolate Chip Larabar too but Brandon and I always joke that it's a healthy candy bar. Have fun in Austin!

  3. PB Chocolate Chip Larabar's are amazing!!! I was a bit nervous to try one, but it was so good! Have a great weekend :)
