Gourmet Pizza and another Snow Day!


Happy Snow Day! Atlanta got hit with 5-6 inches of snow starting around 9 p.m. yesterday. It snowed all night and when I woke up around 7:15 this morning this is what our neighborhood looked like:
Love! Luckily (or unlucky for me?) I prepared ahead and brought home some work on Friday so did a little bit of work this morning, then tackled 4 loads of laundry, then started working on the guest room - my goal is to have it completely spruced up by March when I'm hosting a baby shower here. Before and after pictures will come, but not until the "after" is up and running! John and I also just took Sam for a snow walk which was so fun - the neighborhood is so quiet - we were walking in the middle of the street like we were on Vanilla Sky.

I hope you all had a great weekend. Mine was so chill which was just what I needed. Yesterday I hit the grocery store to stock up for Atlanta's version of a "blizzard" and then read The Hunger Games for at least 2 hours - this book is good! I had to read it because of all of the amazing reviews it received on Amazon. I'm a sucker for bestsellers. It's not going to win any literary awards but the plot is fantastic and it was only $5 on the Kindle. Then my friend Jill and I saw Blue Valentine. The acting was superb but it was super depressing, so don't go if you are looking for a Hollywood ending.

Rewind to Saturday night - after John and I went to the Dali exhibit at the High, we came home and bummed around and watched football for a while. We didn't feel like going out to eat again so we basically pulled another pantry meal together that ended up being so good! I had whole wheat pizza dough in the fridge, 1 1/2 onions leftover from the week, some opened mozzarella and blue cheese in the fridge, and some sun dried tomatoes and walnuts in the pantry. Enter...Rosemary Garlic Pizza with Balsamic Caramelized Onions and Blue Cheese.

Pretty fancy for not having a recipe or a meal plan, right? Here's how it went down:
Ingredients
1 package whole wheat pizza dough (I used Trader Joe's)
2 tablespoons olive oil
1 tablespoon minced garlic (I like a lot of garlic, you can use however much you'd like)
1 teaspoon dried rosemary
1 large onion, thinly sliced
1 teaspoon dried oregano
1/3 cup balsamic vinegar
1/2 cup shredded mozzarella
handfuls of the following:
sun dried tomatoes
blue cheese
walnuts

Directions:
For the onions: Heat a tablespoon of canola oil over medium heat. Add the onions and oregano and cook for about 5 minutes with the lid on. Add 2 tablespoons of water and continue to cook over medium heat for about 10 minutes. Add the balsamic vinegar and cook with the lid off for 10-15 more minutes over medium heat, or until the onions are caramelized and the vinegar is absorbed.

For the pizza: Preheat the oven to 450 degrees. Roll out the pizza dough on a floured surface and place on pizza stone or baking sheet. With a baster, spread the olive oil, garlic, and rosemary on the crust. Bake for about 5 minutes, then remove from oven for topping assembly. (Note - some people put the toppings directly on the raw dough and bake the whole pizza at one time. I've never been able to do this and cook the dough all the way through, so I bake the crust a little bit first). Place the onions, sun dried tomatoes, walnuts, and blue cheese on the pizza, then top with the mozzarella cheese. Place the pizza back in the oven and bake for another 10 minutes. Remove from oven and let sit for 2 or 3 minutes, then slice and serve.

  2. Yum looks great! I need to find a good gluten free pizza dough that I can cook at home. Once I do I can't wait to try this!
