5/24/11 - 3 Years

John and I celebrated our third wedding anniversary last night at home.  We're going away for the long weekend so decided to save our dinner out until then.  We drank champagne and caught up, and then moved the party to the kitchen where we opened a bottle of La Crema Pinot Noir and feasted on a steamed artichoke and some Spanish cheese that I was talked into buying at the grocery last week :-)



While we munched on our appetizer, we got the music pumping and chilled to the new Danger Mouse and Daniele Luppi album, "Rome." Let me tell you guys, that album rocks. It is so relaxing and romantic. (Norah Jones and Jack White both make appearances). I highly suggest downloading it. Great background music for cooking and unwinding.

We made shrimp risotto - nothing too complicated, but a dish that always feels like it's meant for a special occasion. This was just my basic risotto recipe, with cherry tomatoes and fresh basil added for a nice summery flavor. John seared the shrimp after seasoning it with sea salt (which makes everything better), pepper, red pepper flakes, a heavy dose of garlic, and Italian seasoning.




After dinner, we watched our wedding video, which is an anniversary tradition for us at this point.  We always end up cracking up the whole time we watch it.  All in all, a really fun evening hanging at home with my hub.  I am so blessed :-)

  3. Happy Anniversary! We always watch our video too, but we forgot this year. I guess we will just have to wait until our 6th anniversary to get the same laughs!
