The weather has been incredible in Atlanta lately - it hasn't rained in weeks and has been high seventies, sunny, and breezy every day! I've been taking lots of long walks with Sam, working in the yard, and chilling on the porch with white wine - it's been awesome! Of course, with the warm weather naturally comes a transition from heavier soups and "inside" meals to grilled fish or chicken and lighter sides. John and I swap places and he becomes in charge of the main course from now until the fall - which I love!
He made these turkey burgers on Sunday and they were fabulous. We ate them with sweet potato fries - it was definitely a healthier version of burger-and-fries! Here's the master at work:
Spinach and Feta Turkey Burgers
Serves 3
Ingredients
1 lb ground turkey (I used light meat)
1 egg
2 -3 cups spinach
1/3 cup feta cheese
salt
pepper
Directions
Saute the spinach in olive oil and garlic until wilted. Beat egg in small bowl. Combine with turkey, salt, pepper, and massage with hands. Add spinach and feta and combine. Form into 3 medium patties.
Grill on high heat until done, about 6 minutes each side. Serve with desired toppings - we used grilled tomatoes, avocado, spicy mustard, and raw spinach.
