I've made these cookies 7 or 8 times since I got the recipe from my aunt a few years ago and they are always a hit. They have the classic rich and crunchy taste of an oatmeal cookie with surprising hints of coconut and butterscotch. I brought them to Thanksgiving at John's aunt and uncle's house this year and I think they'd also be a Christmas cookie that won't disappoint!
Chewy Oatmeal Cookies
Makes 4 - 5 dozen
Ingredients:
1 1/2 sticks butter
1 1/2 cups sugar
1 egg
1/4 cup water
1 teaspoon vanilla
1 cup flour
1 tsp salt
1/2 tsp baking soda
2 1/4 cups oatmeal
1 cup raisins
1 cup butterscotch chips
1 cup chocolate chips
1 cup coconut
1 cup chopped walnuts
Directions:
Preheat oven to 350 degrees.
Beat the butter (room temperature) and sugar on medium high in an electric mixing stand. Add egg, water, and vanilla and mix well. In a separate bowl, mix the flour, salt, baking soda, and oatmeal, then add to the butter/sugar mix. Beat on high until well blended, then add the last 5 ingredients. Drop by rounded tablespoon on a cookie sheet lined with parchment paper and bake for 15 minutes.
These will definitely be put in our cookie rotation. They look tasty!
