I always laugh at people who stock up at the store for Atlanta's snow storms because they usually last all of a day, but I am really glad I went to the grocery on Sunday. It doesn't look like we're getting out any time soon.
I've been documenting my eats for a few days due to more time on my hands and access to my camera at all meals. Here's what I've consumed - it's weird to look at all of this food and realize I haven't left my house since Sunday night except for a walk!
Sunday breakfast: stovetop oats with almond butter mixed in.
Sunday lunch: unpictured because it was a million Terra Chips and hummus. Has anyone tried these chips? They are like crack and contain a full serving of vegetables in every serving. John and I ate the whole bag in less than 24 hours.

Sunday dinner: vegetarian chili in the crock pot. This was onion, celery, orange bell pepper, 2 cans diced tomatoes, 1/2 cup water, 2 cans beans (one black, one mixed), 2 tablespoons chili powder, 1 tablespoon cumin, salt, pepper and hot sauce. Topped with greek yogurt and cheddar cheese.
Monday breakfast: greek yogurt and a banana. I love love LOVE Chobani's Pomegranate flavor. Some of my co-workers don't like it because of the pom seeds but I actually love seeds in my yogurt. Something to crunch on!
Monday lunch: this is a total Jen sandwich: open faced veggie sandwich on whole wheat: dijon mustard, mashed avocado, sprouts, cherry tomatoes, and colby jack. I put it under the broiler for ultimate meltiness. This was a bomb sandwich! Eaten with the remaining Terra chips.
Monday snacks: cucumbers and hummus, and a Blue Moon.

Monday dinner: John made this vegetable quiche, which is a variation of the simple quiche we made almost a year ago. It was so good! Such a great vegetarian main course that packs a lot of protein and veggies. He used 1% milk instead of half and half which really didn't make a difference, so we won't use the half and half again. Veggies in the quiche included red bell pepper, spinach, and parsley. He already had a second serving for breakfast!
Tuesday breakfast: whole wheat bread with almond butter, banana, and honey. This is a favorite of mine that is always on my breakfast rotation!
Phew! Was that fun to read or totally boring? I love seeing what other people eat because I'm a freak. I ask John what he ate for lunch every single day. :-)
In other news, I added an exercise page. We'll see if it stays up but I always want to update on my exercise but sometimes feel that my posts are too long, so I'm going to include it on its own page and discuss it when it's noteworthy. Finding a way to exercise when you're snowed in requires some creativity but is not that hard! Oh, and I do count walking as a form of exercise if it's substantial (like over 2 miles or so). Do you count walking as exercise?

I totally count walking because we always put in a good 45 minutes to an hour! Plus I am a speed walker which drives Alex crazy when he wants a casual walk:) Enjoy your snow day.

That is a Jen sandwich! I'm definitely going to try your chili and quiche recipes soon. Both are perfect for these cold, winter days. And yes - Terra chips are so addictive! Love them! And I love your blog!

Trace! I recently discovered yoga download!! I have done 3 video classes while we have been snowed in. I am horrible at yoga and refuse to do it in public. I really like these videos and maybe one day I will improve enough to take real classes. Enjoyed the post! I am bored out of my mind at home, there is only so much studying I can do. ReplyDeleteJust found your blog through peanutbutterrunner.com! I've also made a few of those "Jen sandwiches" this week since I was snowed in for 2 days. Try it with muenster cheese sometime..seriously amazing. Now if only I didn't live so far away from my work I'd be able to eat them more often!
