This has been such a beautiful weekend! Somehow Atlanta got blessed with weather in the 60's and sunny both days this weekend. John and I totally took advantage of the weather and spent tons of time outside. We did hit the gym up on Saturday morning first though. John spent about 45 minutes with me showing me all kinds of ways to add strength training to my routine. I'm so intimidated by the weight room (the free weight area - literally like a dotted line I don't cross!) and hopefully with a few more sessions with my hub I'll be able to walk into the weight room with confidence.
Saturday afternoon we went to Zoe's Kitchen with friends - Emily and Andrew, and Lindsay and Brent. I have GOT to get better about taking pictures - I promise you this is a goal of mine. I had the hummus salad plate which was really good! Both of my girlfriends who were with us are preggo so there was lots of baby talk. It was so fun to catch up. John and I hit the park after lunch for a long walk with Sam. Unfortunately we had to cancel plans Saturday night with Diana and Eric because John felt like he was coming down with something. I got paranoid it was whatever I had last week (I think the flu?) so we stayed in and watched The Social Network, finally...I really enjoyed the movie, especially because our generation lived through the evolution of Facebook.
Today we went to church (we have not been regular church goers in the 8 years we've been together; however, it was a resolution of ours to start going and we've gone twice this year). I have to say it totally started my day on the right note and I am so glad we went. Then we hit up the Whole Foods salad bar for lunch, and then my friend Bridgette came over and we let the pups play in the backyard, and took them for a 2.5 mile walk. It was so beautiful outside, I could have walked so much longer!
Dinner tonight was salsa chicken - a recipe I saw on Peanut Butter Fingers, which has become one of my favorite blogs recently. I love how Julie's meals are always delicious but also super easy. This one couldn't have been easier and I thought it was really tasty. Side note - I don't always mention it, but I always buy organic chicken breasts - I know they're more expensive but after seeing Food Inc. I can't go back to non-organic - it's worth it to me to pay the extra money since we don't cook with meat every night of the week anyways. I put 3 chicken breasts in the crock pot, covered them with a jar of salsa, and cooked on low for 8 hours. Then John shredded the chicken with a fork, mixed a little bit of the hot salsa with it, and that was it. Couldn't have been easier and I think leftovers would be so good in enchiladas, taco salads, or even sandwiches. Served with roasted veggies and jalapeno cornbread. I've got a lot of food pics from last week loaded up on my camera so have compiled an assortment of my eats below. This is definitely not everything I ate (please, there is dessert almost every night, plus I don't take pictures outside the comfort of my own home!). |
