Dinner tonight was put together in about an hour (counting baking time) and another delicious pantry meal that felt like something more! Ever since I got the Real Simple cookbook a few Christmases ago, I've become a huge fan of quiche for dinner. Served with a side salad, it's light, healthy, and comforting. I also love how you can completely add lib depending on what's in your fridge and freezer.
Tonight's eggy dinner followed this recipe and included:
- sun dried tomatoes
- gouda cheese
- prosciutto
- spinach
- onion
- salt & pepper
- thyme
- nutmeg
- olive oil
- balsamic vinegar
- dijon mustard
- maple syrup
- garlic salt
So simple and so good! To be honest, today was not the best day. I was in a funk all day, even after trying to shake it with a longish run and a walk with Sam this morning. Having time to come home, clean my house, and make this meal really calmed me down. I know that sounds crazy but it's true - having a sense of order and control at least at home makes me feel more centered. Oh and ice cream doesn't hurt - currently having a bowl of vanilla bean with chocolate sprinkles :-)

How do you get yourself out of a funk after a bad day?

The salad sounds awesome! Can't wait to try it. Sometimes I like to go out to eat to get out of a funk...somewhere fun and enjoyable with Alex!
ReplyDeleteI was in a funk on Tuesday too! Wine always seems to help and cooking actually relaxes me too. It gives me something else to focus my efforts on! Looks yummy-can't wait to try it.
