And John went to a bachelor party in Highlands, NC. Phew! Needless to say it is so good to be back in Georgia for a little while with very few out of town plans ahead of us. However, I will say that we enjoyed every minute of our adult spring break and fully embraced the craziness! When we returned from California last weekend, I told John that I think this past month and a half was one of the best AND most exhausting times of my life!
When we have been home, time spent in the kitchen has actually been really fun and refreshing; we've focused on eating seasonally with simple, fresh ingredients. Lots of grilling out with sides of roasted veggies, corn on the cob, or crisp raw salads. I haven't taken a lot of photos because I haven't felt like my meals are that interesting; but in hindsight they have been. If you took a walk around the produce aisle and saw what was on currently on sale, you'd probably see a good snapshot anyways - tomato, mozzarella, and basil salads; steamed artichokes; spinach and strawberry salads; and a really fantastic blueberry crumble.
Apparently I have more readers than I thought I did as I've had a handful of people ask me where I've been! I look forward to returning to the blog world now that things are returning to a normal pace. I hope you had a beautiful weekend. I wrapped mine up just the way I like to - on the porch with a glass of wine, grilling out.
Have a great week!
