Heat a couple of tablespoons of olive oil in a frying pan on medium-high.
Season fish with salt, pepper, oregano, and lemon juice.
Wait til olive oil is "smoking hot" (according to John) and place the fish directly on the oil.
Leave on heat for about 3 minutes, and flip once.
Cook for an additional 3 minutes, and remove from heat.
Dinner is served!
Simple recipe, amazing results, every time! This was served with parmesan couscous, doctored up with basil and flat leaf Italian parsley from our herb garden, as well as pine nuts and artichokes. I also sauteed kale and spinach in olive oil, white wine, garlic, and fresh lemon juice. What's your favorite go-to recipe?
Tracy - I'm so excited that you started a blog. Looks great so far. I added it to my Google Reader so I don't miss any of your posts!
ReplyDeleteI will send you the information on Operation Baking Gals so maybe we can get that going in September or October.
Have a great weekend!
