When the Cat's Away...

Thursday turned into an impromptu girl's night with some besties.  It started, as most nights do, in the kitchen like this:



We had some fun with this easy appetizer, along with fish tacos:


And ended like this:






But because this is a food blog, I'll give you a simple Mexican appetizer or side dish.


Lindsay's Black Bean Delight
Ingredients:
2 cans black beans, rinsed and drained
1 can corn
2 tomatoes, chopped
1 bunch cilantro, chopped


Directions:
Mix it all together and serve with tortilla chips!
